
Homemade Taquitos Recipe
Never dry, always crunchy, with a touch of salt.
Seriously better than any taquitos you’ll order at a restaurant.
Mmmmm, Mmmmm good.
Since as far back as I can remember, this has been one of my all-time favorite comfort meals. When my Momma makes her yummy taquitos, I turn into a teenage boy–as in I eat about a dozen. It’s not pretty, but it sure feels good.
My grandma {Dad’s Mom} taught my Mom how to make these way back when my parents were newly weds.
Ingredients:
Vegetable Oil
Canned Roast Beef
Corn Tortillas
Salt
First, open the roast beef and break apart the clumps with a fork until their are no large pieces.
Next, microwave about 10 tortillas at a time until soft enough to roll without breaking. Be sure to wrap them in paper towels or cover them with paper plates before you microwave so they don’t get rubbery.
Spread a heaping tablespoon worth of meat onto the edge of a tortilla.
Tightly roll up the tortilla and place in a cookie sheet seam side down.
Continue this step will all your tortillas {make a lot, trust me}.
Once all the taquitos are prepped, you are ready to start frying them.
Pour enough vegetable oil in the pan to cover the bottom.
Turn the burner onto medium/high heat and wait for the oil to get hot.
Use tongs to place the taquitos seam side down in the pan.
Taquitos should take approximately 5 minutes to brown on one side (takes longer for a larger pan). Once brown on one side, flip with the tongs.
Sprinkle salt to taste while they finish cooking.
Remove the taquitos from the pan and place on a paper towel lined plate to remove excess grease. And of course, top with cheese.

RandiIf you have a Costco nearby, you can ask them for their shredded rotisserie chicken breasts. They don’t put it out front very often but keep it in the back. It is the same chicken they use for their potpies and chicken noodle soup. I love buying it that way since my family likes the chicken breast meat and it is much easier since it is already shredded. (Makes the best chicken enchiladas)

Thanks for posting this; I am always looking for quick & easy dinner ideas… this is a dinner item, right? Not just a snack? Lard is best, shortening works well also
Drain beans reserving liquid. I use a colander on top of another bowl. Heat lard/shortening in large, preferrbly heavy bottom skillet on medium. To keep them from splattering, add the beans slowly. Allow to fry in oil, about a minute or so. Using a hand held potato masher or the back of a wooden spoon, begin to mash beans. Continue mashing until all beans are mashed. Stir in some of the reserved bean liquid, cook on medium low stirring until desired consistency adding more of the bean liquid, if needed. I use most of it, if not all.
If the rest of your meal isn’t quite ready to serve, you can keep these on a low flame, adding more of the bean liquid if needed. Add your choice of seasonings to taste, these all work well: garlic powder, onion powder, salt and pepper. Top with cheese if desired. I didn’t mention any measurements because that would be your preference. However, when it comes to the lard/shortening, depending on skillet size, a 1/4 inch melted, should be sufficient. If not you can add more. Remember, you can always add more of something, but you can’t always take away. Enjoy!

Randi – you can buy canned chicken (i get mine at Sams) that would work exactly like this, oh and it's better if you brown it up a bit in a pan instead of using it straight from the can.

Yum! I love taquitos. I make chicken taquitos filled with chicken, salsa, cream cheese, grated cheese, and corn. I do mine on a pampered chef stone in the oven, spritzed with cooking oil spray (like Pam)… a little lighter than frying, but still crispy and tasty!
taquitos and fajitas and quesadillas are my favourite foods. Yummmmmmmm.

I also make these with shredded chicken. You can boil a whole chicken, just chicken breasts, breasts/ thighs together, or also just buy a whole rotisserie chicken and shred either yourself depending on time and/or money available. They are so good with sour cream and guacamole!! Saw an earlier post about trying with veges & wonder how that would be & what type of veges would be best…might be good. Would like to know if anyone tries that!

I’d always been afraid to make these at home, but figured they had to be easy 😉 I made them with chicken for my SO, but would love to do a veggie version for myself.
I overcooked mine 🙁 Turned out too crispy, and I had a hard time rolling them tight, even with warming the tortillas. All ‘user error’ – ha ha – I am sure I’ll do better with practice. Still MUCH tastier and less expensive than store bought alternatives.

This is how I make them. I normally use pulled pork or shredded chicken as the filling. Cheaper than beef these days. Also very good with a carnitas filling.
